Paneer dodi, also called Withania coagulans, is a small bushy shrub and belongs to the family Solanaceae. It is commonly known as ‘paneer dodi’ or ‘Indian cheese maker’ because the fruits of this plant have milk coagulating properties, and therefore, it is called paneer dodi. Traditionally, different parts of the plant, mainly the fruit, were used as a magic healer for health conditions.

Vegetarian and Vegan-Friendly:

One of the primary benefits of vegetable rennet is that it provides a plant-based alternative to traditional animal rennet, making it suitable for vegetarians and vegans. This allows individuals to enjoy a wide variety of cheeses without relying on animal-derived ingredients.

Ethical and Environmental Considerations:

Vegetable rennet is often chosen by those who are conscious of ethical and environmental concerns. Using plant-based sources for rennet helps reduce reliance on animal products, contributing to sustainability and animal welfare.

Cultural and Religious Compatibility:

Some cultures and religions have dietary restrictions that discourage the consumption of products derived from animals. Vegetable rennet provides an option that aligns with these dietary considerations.

Availability and Accessibility:

Vegetable rennet is widely available and accessible, making it a convenient choice for cheese makers. This availability ensures that a broader range of cheeses can be produced using a plant-based coagulating agent.

Consistent Coagulation:

Vegetable rennet can offer consistent coagulation properties in cheese-making. This consistency is important for cheese makers who aim to achieve specific textures, flavors, and qualities in their products.

Reduced Health Concerns:

Vegetable rennet eliminates concerns related to the transmission of diseases that may be associated with traditional animal rennet. This can be a consideration for those who prioritize health and safety in their food choices.

Diversity in Cheese Production:

The use of vegetable rennet allows for the production of a diverse range of cheeses that cater to various dietary preferences. This diversity contributes to the availability of options for consumers with different dietary needs and preferences.
